1. Activate the yeast:

In a small bowl, combine:

2. Make the dough:

Pour in the foamy yeast mixture. Mix until a shaggy dough forms, then knead for 6–8 minutes (or 4–5 minutes in a mixer) until smooth and elastic.

3. First rise:

Cover the bowl with a damp towel or plastic wrap. Let the dough rise in a warm place for 1–1.5 hours or until doubled.

4. Shape into 4-inch buns:

Punch down the dough and divide into 8 equal pieces. Roll each into a ball. Flatten slightly to about 4 inches wide.

Place buns on a parchment-lined baking sheet, spacing them at least 1.5 inches apart.
